Dolmeh



Dolmeh is one of our traditional delicious foods. It is cooked in different flavors such as salty, sweet, and sour. But the most popular type is salty. I know that Arabs has this food in their own way of cooking. Nowadays, Dolmeh is not a very usual food in Iranian houses since this is difficult to cook and take a long time to prepare, but still is cooked in grand mamas houses. My mom tries to prepare it one or tow times in a year and this year I learned to cook it, too. It was such a different experience!

Ingredients:
Split peas: 1 cup

Rice: 2 cup

Granulated meat 250gr

Fresh vegetables included; Tarragon, dill, sweet fennel, parsley: Totaly250 gr (chopped)

Onion: 1medium (chopped)

Barge mo 500 gr

Vine Leaf: 500 gr (fresh)

Spices include Pepper, Turmeric, Caraway-seed, salt: enough


Recipe:

1. Boil Split peas (add some salt). Let it became a bit soft, then add rice and cook well.

2. Fry the chopped onion, add spices and then the granulated meat and mix them with the boiled rice and peas with.

3. Fill all the leafs by the mixture. Note to turn it water tight and do not let it open at all. (Do it step y step, follow the photos on the below)

4. Put all turned leafs one by one in a suitable pot. Add some hot water (about a cup) on it. You should add the hot water little by little. If it needed more add again. Let it cooks well. You can add some oil to make it shiny.

5. It's ready to serve. You can serve it with bread. Enjoy!

Halva


In an afternoon, when you are free at home and do not know what do you like to eat or even to do, cooking a dish of "Halva" is a good solution!
"Halva" is a kind of Persian dessert which is often served at Ramadan month, religion parties and also at commemorate for dead people. There is also a nice custom in Iran that people cook Halva sometimes on Thursday evenings and parcel it as a charity because of their dead relatives.
In any case, Halva is a delicious dessert with sweet taste!

Dam-Pokhtak


Few days ago,We asked mom a traditional food.A dish that we had never tried till that day!
Mom did it as wel,l like her other foods.It was really delicious.The colorful dish you see in the photo is Dam-Pokhtak.It has rice,groats,vermicelli,onion,little slices of meat and spices,It is very very delicious!!!
Ingredients for 4-6 people
150 gms Wheat groats
150 gms Rice
1 medium potato (chopped well in a cube shape)
1 medium onion (chopped well)
200 gms mutton
150 gms pop noodle
1tsm of each one: salt, turmeric pepper (black powder), cinnamon
Method
1. Mix wheat groats with rice then soak them (with water and 2 sp salt) 4 hours before start cooking.
2. Fry potato with some oil and bring it out from oil.
3. Fry onion and add pop noodle to it, mix them well and add mutton, mix all and let it to be roasted. Then add potato, salt, turmeric, pepper, cinnamon as well and stock it.
4. Now,wash away rice and groats and add it to a steam-tight full of under boiling water and let it boil (do not let it become crushed) then swill it out.
5. choose a suitable vessel, add oil in it and set some slices of potato at the base on it (you can also use bread instead of potato),add some of the mixture of boiled rice and groats and make a layer of the fried mixture on it. Do it layer by layer till end and close the vessel .Let it cooks over steam.
You can use some saffron when you want to serve it.

Khoresh-e-Karafs (Celery)

This is a Famous Iranian food that is so delicious and healthy.We try it with hot over steamed rice.There is a secret about this food that most of the Iranian men do not like it.As my father,brother and aunt's husband avoid to eat this Khoresh. I really do not know why?! but I offer you to experience it!
